Pork bone soup with Chinese herbs
 

Chinese traditional herbs used as the ingredients are beneficial to health. They mainly consist of Hou Zao (common yam rhizome) (Calculus macacae mulattae), Bai He (bulbous lily) (Lilium brownii F. E. Brown), fragrant Solomon’s seal rhizome (Polygonum Odoratum), dried longan (Dimocarpus longan Lour.) and lotus nuts (Nelumbo nucifera). Hou Zao has medicinal properties of helping digesteric system, reducing insomnia and clearing internal heat and being bored with food. Bai He eliminates phlegm, calms fear, reduces internal heat and isomnia and makes refreshment. Fragrant Solomon’s seal rhizome reduces heart disease and eliminates internal heat and thirsty. Dried longan enriches nervous system, reduces insomnia and nourishes general health such as blood and skin. Dried lotus seed gives alertness and energy, makes a good appetite, enriches nervous systems and reduces diarrhea.

g. pork bones  soup

tsp sea salt

medium size onion (chopped)

liters of water ( 9 cups )
  
Chinese herb

g. chinese yam

g. pearl Barley

g. lily bulb

g. solomonseal rhizome

dried longan
 
     
     Method  
       
 
  1. Clean the pork bone, cut into short pieces and set aside.
  2. Scald pork bone in boiling water for 2-3 minute ,remove and set aside.
  3. Boil 2 liters of water in a saucepan on medium heat, add Chinese herbs and then boil for 5 minutes. Add pork bones and bring back to the boil. Remove bubbles completely (refer to Rice noodles in clear soup recipe regarding the bubbles) if they are present. Add onion, remove bubbles again, close the pan and simmer for 20 minutes. Lower the heat to medium heat and simmer on medium heat until the soup is sweet. Test the soup for your appetite, add salt of it is not salty enough and then remove the heat.
  4. Put the soup in the bowl and serve immediately.
